More Marbling, More Flavour
Cut from the rump end of the sirloin, these steaks carry a slightly larger fat cap and more marbling running through the meat than a leaner mid-loin cut. That's exactly what you want: the fat bastes the steak as it cooks, keeping it juicy and delivering a bigger, beefier flavour. Trim the cap to your taste, or leave it on and let it work.
Four ways to get it right.
Big, marbled sirloin steaks love high heat. The fat cap and marbling keep them juicy, so they're forgiving and full of flavour.
Pan-fry
Get a heavy pan screaming hot. Oil and season, sear hard 3-4 minutes per side for medium-rare. Render the fat cap on its edge, add butter and thyme, baste, then rest.
BBQ
Char over direct high heat, turning once. The marbling drips and flares for that smoky BBQ flavour. Rest for 5 minutes before serving.
Grill
Whack the grill to high. Grill close to the heat for colour, then move down to finish to your liking. Quick and fuss-free.
Rest & serve
Whatever the method, rest the steak 5 minutes before cutting so the juices settle. Serve with garlic butter, peppercorn sauce or chunky chips.

Where does the beef come from?

The rump end of the sirloin carries a slightly larger fat cap and more marbling. That extra fat bastes the steak as it cooks, giving a juicier, more flavourful result than a leaner cut. You can trim the cap to your taste if you prefer.
How many steaks will I get?
Steaks are around 10oz each. Roughly 14-15 in the 4kg, 28-30 in the 8kg and 42-45 in the 12kg.
How is it delivered?
Packed in a fully insulated carton with chiller blocks, sent super chilled via tracked courier. Choose your delivery day at checkout. It keeps fridge-fresh for up to 36 hours unopened.
Can I freeze it?
Yes, they're fresh and freezable. Split into meal-sized portions and freeze, then defrost as you need them.
Is delivery free?
Delivery is free on the 8kg and 12kg packs. The 4kg has a small £5.99 delivery charge.
