Four ways to get it right.
Marbled, forgiving and full of flavour. Here's how the butcher would cook them.
Pan-fry
Get a heavy pan screaming hot. Drizzle of oil, season well, sear hard 3-4 minutes per side. Add butter, thyme and garlic for the last minute, baste, then rest.
BBQ
Get the BBQ blazing hot. Oil and season the chunks generously, then char over direct heat, turning once. Rest for 5 minutes before slicing against the grain.
Grill
Whack the grill to high. Season, grill close to the heat for a good colour, then move down to finish. Perfect for a quick, fuss-free cook.
Roast
The chuck especially loves it low and slow. Sear hard, then add stock, onions and herbs, cover and roast gently until fork-tender and falling apart.

How is the order delivered?
Packed in a fully insulated carton with chiller blocks, then sent via our super chilled overnight courier. It keeps fridge-fresh for up to 36 hours unopened.
When will it arrive?
This ships on our ASAP service. We'll notify you 24 hours before your delivery day, then on the morning itself you'll get a one-hour time slot by text or email so you know exactly when to expect it.
Can I freeze it?
Yes. Your bags arrive vacuum fresh, dated until August, ready to freeze. Use fresh or portion and freeze as you like.
How big are the bags?
Each bag is packed by weight at approximately 1.5kg to 3kg. You choose the total, 5kg, 10kg or 20kg, and we make it up in bags.
