21 Day Aged
Every sirloin is matured for a full 21 days. This slow ageing process develops deep, rich flavour and breaks down the fibres for melt in the mouth tenderness in every steak.
Four ways to get it right.
Tender, aged and full of flavour. Here's how the butcher would cook the perfect sirloin.
Pan-fry
Get a heavy pan screaming hot. Drizzle of oil, season well, sear hard 2-3 minutes per side for medium-rare. Add butter, thyme and garlic for the last minute, baste, then rest.
BBQ
Get the BBQ blazing hot. Oil and season generously, then char over direct heat, turning once. Rest for 5 minutes before slicing against the grain.
Grill
Whack the grill to high. Season, grill close to the heat for a good colour, turning once. Rest before serving for a juicy, even cook.
Reverse sear
Warm gently in a low oven, then finish in a screaming hot pan for a deep crust. The aged sirloin stays beautifully tender edge to edge.

How is the order delivered?
Packed in a fully insulated carton with chiller blocks, then sent via our super chilled overnight courier. It keeps fridge-fresh for up to 36 hours unopened.
When will it arrive?
You choose. Pick your preferred delivery day at checkout and we'll have it super chilled to your door on that date. You'll get tracking so you know exactly when to expect it.
Can I freeze the steaks?
Yes. Your steaks arrive vacuum sealed and super fresh, ready to freeze. Use straight away or portion into the freezer as you like.
How big are the steaks and how many do I get?
Standard steaks are approx 200-250g, so roughly 10-12 in the 2.5kg, 20-25 in the 5kg, and 40-50 in the 10kg. Extra Thick steaks are approx 400-500g, so around half as many but double the size.
What's the difference between Standard and Extra Thick?
Same premium grass fed, 21 day aged sirloin, just cut to your preference. Standard is approx 200-250g per steak, Extra Thick is approx 400-500g for a proper steakhouse cut. Both are the same price per pack.
