What does "chain off" mean?

Less Waste, More Fillet

The "chain" is the thin side muscle that runs along a whole fillet. We remove it, so what you get is the clean, trimmed centre of the fillet. It might not be the prettiest butchery term, but it means far less waste and more premium meat for your money.

Delivered whole and trimmed, so you're in control. Remove the thin silverskin on top, then slice into thick fillet steaks, a whole roasting joint, or a centre-cut Chateaubriand. However you like it.

How to prepare a beef fillet at home

Fillet steaks

Slice into portions

Cut into thick steaks (approx 200-250g each). Sear hard in a screaming hot pan 2-3 minutes per side, baste with butter and thyme, then rest. The most tender steak there is.

Best for: special occasions, the ultimate steak night

Chateaubriand

Centre cut

Keep the thick centre whole for a Chateaubriand to share. Sear all over, then finish in the oven and rest well before carving into thick slices.

Best for: date night, sharing, showing off

Whole roast fillet

Low then hot

Roast the whole fillet for a stunning centrepiece. Sear all over, roast gently to your doneness, rest, then carve. Perfect medium-rare from end to end.

Best for: dinner parties, Christmas, celebrations

Beef Wellington

The showstopper

The centre of the fillet is exactly what you want for a Wellington. Sear, wrap in mushroom duxelles and pastry, and bake to a perfect blushing pink.

What does "chain off" mean?

The chain is the thin side muscle that runs along a whole fillet. We remove it, leaving the clean, trimmed centre of the fillet. It means less waste and more premium usable meat for your money.

Do I need to do anything before cooking?

Just remove the thin layer of silverskin on top of the fillet before slicing. Slide a sharp knife under it and pull it away. Then slice into steaks, or keep it whole to roast.

How big is each fillet?

Each whole fillet is approximately 1.8kg to 2.2kg. Choose 2, 4 or 6 fillets. As a rough guide one fillet yields around 8-10 thick fillet steaks.

How is it delivered?

Packed in a fully insulated carton with chiller blocks, sent super chilled via overnight courier. It keeps fridge-fresh for up to 36 hours unopened.

Can I freeze it?

Yes. Your fillets arrive vacuum sealed and super fresh, ready to freeze. Freeze whole, or slice into steaks and freeze in portions.

Where does the beef come from?

Premium British grass fed beef, fully traceable and 21 day aged for tenderness and flavour.
