Grill

Get the grill or BBQ blazing hot. Brush the steak with oil, season generously with salt and pepper. Grill 3-4 minutes per side for medium-rare. Rest for 5 minutes before slicing.

Get a heavy pan (cast iron is best) screaming hot. A drizzle of oil, season, then sear hard for 2-3 minutes per side. Add butter, thyme and garlic for the last minute, baste, then rest.

Braise
90 MIN LOW & SLOW
Sear hard in a heavy pot, then add stock, red wine, onions and herbs. Cover and braise low for around 90 minutes until fork-tender. The leaner cut keeps its shape and soaks up the sauce.
Best for: Sunday dinners, cold nights, falling-apart texture
Air-fry
8-10 MIN AT 200°C
Preheat the air fryer to 200°C. Season the steak well and place in the basket. 8-10 minutes total, flipping halfway, for a medium-rare result. Quick, clean, and reliable every time.
